Mama Avila's Soup



Delicious Chicken breast and rice soup, garnished
with fresh avocados, cilantro and diced tomatoes and onions
 
 
Ingredients:

100 fluid oz chicken broth

3 large skinless, boneless chicken breasts; cubed

1 large  onion; chopped

1/2 cup cilantro; chopped

2 packages Mahatma Spanish Rice Mix (or any mexican rice); prepared peparately

1 pinch Lawry salt; to taste

1 pinch cayenne pepper; to taste

1 large avocado; sliced

1 fresh lime, sliced into wedges

Pre-cook chicken to "Just done" and cut them into medium size pieces.. Pre-cook the Mahatma spanish rice in a separate pot following the package directions. Place the chicken broth, chicken breasts, and the cooked rice into a large soup pot and simmer on medium low heat. Season to taste with lawry's salt and cayenne pepper.

To serve, bring up to serving temperature. Ladle into soup bowls, and garnish with fresh sliced avocados, fresh cilantro, diced tomatoes and onions. I recommend a squeeze of lime in the soup prior to enjoying it and some warmed flour or corn tortillas.
